About Hummingbird Farms
Currently owned and operated by Jack and Debi Williams, the first lavender field at Hummingbird Farms was planted after researching various lavender cultivars for optimal essential oil production. The most highly prized lavender oil, Lavendula angustifolia, or “True Lavender,” is grown at Hummingbird Farms. Visitors are welcome at Hummingbird Farms during the blooming season where they can enjoy strolling through lavender fields and gathering their own fragrant bouquets.

Native Texans, Jack and Debi are happy to be living once again in a serene country atmosphere. As career professionals, they spent many years living in various areas of the country before being able to settle back in their home state. They realized as children their love of the land, as both their grandfathers were full-time farmers. Jack is a graduate of the U.S. Naval Academy and served for 5 years as a Naval Officer, spending most of that time deployed to the Middle East. He holds an MBA from The Darden School, University of Virginia, and has held several positions in the financial services industry. Debi grew up in the Big Bend area of Texas, and is a graduate of Sul Ross State University. She has been employed by a global healthcare company for almost 20 years. Her fascinating career has enabled her to travel and live throughout the United States.

Hummingbird Farms is nestled between Johnson City and Fredericksburg in the heart of the Texas Hill Country. Lavender was first grown at Hummingbird Farms in 2003; however, this working farm has a history spanning over 100 years. The John N. Seguin family was the first family to break ground here, followed by another pioneering family, the Schaefer family of Hye, Texas. Later, a prominent San Antonio businessman used the farm as a cattle ranch for his prized Texas Longhorns.
